Little Millet Pulao

Ingredients: - 

1 cup little millet grains 

2 cups water or vegetable broth 

1 tablespoon oil or ghee 

1 small onion, finely chopped 

2 cloves garlic, minced 

1 teaspoon cumin seeds 

1 teaspoon turmeric powder 

Salt to taste 

Fresh coriander leaves for garnish 

Instructions: 

1. Rinse the little millet grains thoroughly in cold water and drain. 

2. In a saucepan, heat oil or ghee over medium heat. Add cumin seeds and let them splutter. 

3. Add the chopped onion and minced garlic to the pan and sauté until the onion turns translucent.

4. Add the rinsed little millet grains to the pan and toast them for a couple of minutes, stirring continuously. 

5. Add turmeric powder, salt, and water or vegetable broth to the pan. Stir well. 

6. Bring the mixture to a boil, then reduce the heat to low, cover the pan, and simmer for 15-20 minutes, or until the millet grains are tender. 

7. Once cooked, remove from heat and let it sit, covered, for a few minutes. 

8. Fluff the pulao with a fork and garnish with fresh coriander leaves. 

9. Serve the little millet pulao as a delightful side dish or as a satisfying main course.
